Sundial Chefs Perform at Holdenby Food Show

Over the August Bank Holiday weekend, Holdenby House held their annual Food Show, showcasing a wide range of local food and drink producers, attended by an estimated 3,000!

Two of Sundial Group's top chefs, Lee Gaskins, Head Chef at Highgate House and Jerry Toth, a former Head Chef at Woodside who is now a Director of the Group, were chosen to perform a live cookery demonstration at the Food Show. Although both Jerry and Lee have considerable experience of taking part in high-pressure competitions neither of them has partaken in a live demonstration before and so, much to the amusement of colleagues, but understandably, they were very nervous.

With an on-looking crowd of 150, the chefs chose a tarte-tatin theme, preparing one sweet version and one savoury version. The first was a parsnip and caramelised onion tarte-tatin, accompanied by a goat's cheese rillet and a rocket salad with walnut dressing; the sweet variation was an apple tarte-tatin with butterscotch. Much to the pleasure of the crowd, they were invited to sample both.

Jerry and Lee were thrilled to be given the chance to demonstrate their skills, proving to the crowd the culinary delights that can be expected when dining at Highgate House's Terrace Restaurant.
